A delicious and easy recipe for savory pork chops cooked in a Crock-Pot with tender potatoes.

- 2 pounds bone-in pork chops
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 medium onion, sliced
- 4 cloves garlic, minced
- 4 medium potatoes, peeled and cut into chunks
- 1 cup chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1/2 teaspoon red pepper flakes (optional)
- 1 cup frozen peas (optional)
Instructions
- Season the pork chops with salt and black pepper on both sides.
- In a large skillet, heat olive oil over medium-high heat.
- Sear the pork chops for about 3-4 minutes on each side until browned. Remove from heat and set aside.
- In the Crock-Pot, layer the sliced onions and minced garlic at the bottom.
- Add the potato chunks on top.
- Pour in the chicken broth, then sprinkle the dried thyme, paprika, and red pepper flakes (if using) over the potatoes.
- Place the seared pork chops on top of the potatoes.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the pork is tender and cooked through.
- If using, add the frozen peas during the last 30 minutes of cooking. Stir gently before serving.
Notes
- For best results, use bone-in pork chops for added flavor and moisture.
- You can substitute sweet potatoes for a different taste or add carrots for extra veggies.
