- 2 large zucchinis, sliced into rounds
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup cherry tomatoes, halved
- 1 red bell pepper, diced
- 1/2 cup red onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup olive oil
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish with cooking spray or olive oil.
- In a large bowl, combine the sliced zucchinis, chicken pieces, cherry tomatoes, red bell pepper, red onion, and minced garlic.
- Drizzle the olive oil over the mixture and sprinkle with oregano, basil, salt, and black pepper. Toss everything together until well coated.
- Transfer the mixture to the prepared baking dish, spreading it out evenly.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
- Remove the dish from the oven and sprinkle the crumbled feta cheese over the top. Return to the oven for an additional 5 minutes to melt the cheese.
- Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
Notes
- For added flavor, marinate the chicken in lemon juice and herbs for 30 minutes before cooking.
- Substitute the feta cheese with mozzarella or goat cheese for a different taste.
