Ingredients
  

  • 2 large zucchinis sliced into rounds
  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 cup cherry tomatoes halved
  • 1 red bell pepper diced
  • 1/2 cup red onion diced
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup olive oil
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C). Lightly grease a 9x13-inch baking dish with cooking spray or olive oil.
  2. In a large bowl, combine the sliced zucchinis, chicken pieces, cherry tomatoes, red bell pepper, red onion, and minced garlic.
  3. Drizzle the olive oil over the mixture and sprinkle with oregano, basil, salt, and black pepper. Toss everything together until well coated.
  4. Transfer the mixture to the prepared baking dish, spreading it out evenly.
  5. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
  6. Remove the dish from the oven and sprinkle the crumbled feta cheese over the top. Return to the oven for an additional 5 minutes to melt the cheese.
  7. Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
