- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup fresh parsley, chopped
- 1/2 cup green goddess dressing (store-bought or homemade)
- Salt and pepper to taste
- 1/4 cup feta cheese, crumbled (optional)
Instructions
- Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, red bell pepper, red onion, and parsley.
- Pour the green goddess dressing over the pasta and vegetables. Toss gently to combine, ensuring everything is evenly coated.
- Season with salt and pepper to taste. If desired, sprinkle crumbled feta cheese on top.
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature.
