Description

A refreshing and vibrant Green Goddess Pasta Salad perfect for any occasion.

Ingredients

Scale
  • 8 ounces rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup green goddess dressing (store-bought or homemade)
  • Salt and pepper to taste
  • 1/4 cup feta cheese, crumbled (optional)

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, red bell pepper, red onion, and parsley.
  3. Pour the green goddess dressing over the pasta and vegetables. Toss gently to combine, ensuring everything is evenly coated.
  4. Season with salt and pepper to taste. If desired, sprinkle crumbled feta cheese on top.
  5. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature.

Notes

  • For added protein, consider mixing in grilled chicken or chickpeas.
  • Substitute the green goddess dressing with a vinaigrette for a lighter option or try a pesto for a different flavor profile.
