  • 8 ounces rotini pasta
  • 1 cup cherry tomatoes halved

  • 1/2 cup red bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1/2 cup fresh parsley chopped
  • 1/2 cup green goddess dressing store-bought or homemade
  • Salt and pepper to taste
  • 1/4 cup feta cheese crumbled (optional)

Method
 

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, red bell pepper, red onion, and parsley.
  3. Pour the green goddess dressing over the pasta and vegetables. Toss gently to combine, ensuring everything is evenly coated.
