- 2 cups cottage cheese
- 6 large eggs
- 1 cup shredded cheddar cheese
- 1 cup chopped spinach (fresh or frozen)
- 1/2 cup diced bell pepper (any color)
- 1/4 cup chopped green onions
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil.
- In a large mixing bowl, combine the cottage cheese, eggs, shredded cheddar cheese, chopped spinach, diced bell pepper, and green onions.
- Add the garlic powder, onion powder, salt, black pepper, and paprika to the mixture. Stir until all ingredients are well combined.
- Pour the mixture into the prepared baking dish, spreading it evenly.
- Bake in the preheated oven for 30-35 minutes, or until the edges are golden and the center is set.
- Allow to cool for 5-10 minutes before slicing and serving.
Notes
- For a spicier version, add diced jalapeños or a pinch of cayenne pepper to the mixture.
- You can substitute the cheddar cheese with feta or mozzarella for a different flavor profile.
