Ingredients

  • 2 cups cottage cheese
  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 1 cup chopped spinach (fresh or frozen)
  • 1/2 cup diced bell pepper (any color)
  • 1/4 cup chopped green onions
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil.
  2. In a large mixing bowl, combine the cottage cheese, eggs, shredded cheddar cheese, chopped spinach, diced bell pepper, and green onions.
  3. Add the garlic powder, onion powder, salt, black pepper, and paprika to the mixture. Stir until all ingredients are well combined.
  4. Pour the mixture into the prepared baking dish, spreading it evenly.
  5. Bake in the preheated oven for 30-35 minutes, or until the edges are golden and the center is set.
  6. Allow to cool for 5-10 minutes before slicing and serving.
