- In a medium saucepan, heat 2 tablespoons of coconut oil over medium-high heat until it melts and shimmers.
- Add 1 cup of rinsed long-grain rice and stir to coat it with the oil. Sauté for 3-4 minutes until golden and fragrant.
- Finely mince 1 garlic clove and add it to the saucepan. Cook for an additional minute until the garlic becomes fragrant.
- Pour in 1.5 cups filtered water and ½ teaspoon fine sea salt, stir to combine, bring to a simmer, then cover and let it simmer for about 18 minutes.
- Remove the pot from heat but keep it covered. Allow the rice to rest for 10 minutes.
- Fluff the rice with a fork, fold in ½ cup fresh cilantro, the zest of 1 lime, and 1 tablespoon lime juice. Mix well.
