Step-by-Step Instructions
  1. In a medium saucepan, heat 2 tablespoons of coconut oil over medium-high heat until it melts and shimmers.
  2. Add 1 cup of rinsed long-grain rice and stir to coat it with the oil. Sauté for 3-4 minutes until golden and fragrant.
  3. Finely mince 1 garlic clove and add it to the saucepan. Cook for an additional minute until the garlic becomes fragrant.
  4. Pour in 1.5 cups filtered water and ½ teaspoon fine sea salt, stir to combine, bring to a simmer, then cover and let it simmer for about 18 minutes.
  5. Remove the pot from heat but keep it covered. Allow the rice to rest for 10 minutes.
  6. Fluff the rice with a fork, fold in ½ cup fresh cilantro, the zest of 1 lime, and 1 tablespoon lime juice. Mix well.
