Ingredients
  

  • 4 cups mixed salad greens such as arugula, spinach, and romaine
  • 8 ounces goat cheese sliced into 1/2-inch rounds
  • 1/2 cup breadcrumbs preferably panko for extra crunch
  • 1/4 cup olive oil divided
  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup walnuts chopped (optional)

Method
 

  1. Preheat your oven to 375°F. Line a baking sheet with parchment paper.
  2. In a shallow bowl, combine the breadcrumbs with 2 tablespoons of olive oil, salt, and pepper. Mix well.
  3. Dip each slice of goat cheese into the breadcrumb mixture, pressing gently to adhere the crumbs. Place the coated cheese rounds on the prepared baking sheet.
  4. Bake the goat cheese for 10-12 minutes, or until golden and warmed through.
  5. While the cheese is baking, prepare the dressing by whisking together the remaining olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper in a small bowl.
  6. In a large salad bowl, combine the mixed greens, cherry tomatoes, and walnuts (if using). Drizzle with the dressing and toss gently to coat.
  7. Once the goat cheese is ready, remove it from the oven and place the warm rounds on top of the salad. Serve immediately.
