Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine warm water, sugar, and active dry yeast; let it sit for 5-10 minutes until foamy.
  2. In a large mixing bowl, whisk together all-purpose flour and salt; add the yeast mixture and olive oil, mixing until a dough forms.
  3. Transfer dough to a floured surface and knead for 5-7 minutes; shape into a ball, place in a greased bowl, cover, and let rise for 1 hour.
  4. In a skillet, sauté thinly sliced yellow onions for about 30 minutes until caramelized; add minced garlic and spinach, cooking until wilted.
  5. Preheat oven to 375°F (190°C). Roll out risen dough, spread filling, roll tightly, and cut into 10-12 pieces, placing in a greased baking dish.
  6. Brush tops with olive oil if desired, bake for 20-25 minutes until golden brown, and let cool slightly before serving.
