Ingredients
  

  • 3 cups cooked chicken shredded
  • 1 cup plain Greek yogurt
  • 1 cup cucumber grated and drained
  • 1/4 cup fresh dill chopped
  • 2 tablespoons lemon juice
  • 2 cloves garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 cup red onion finely chopped
  • 1/4 cup cherry tomatoes halved

Method
 

  1. In a large bowl, combine the shredded chicken, Greek yogurt, grated cucumber, dill, lemon juice, minced garlic, salt, black pepper, and paprika. Mix well until all ingredients are evenly coated.
  2. Gently fold in the red onion and cherry tomatoes.
  3. Taste and adjust seasoning if necessary.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve chilled on a bed of greens, in a wrap, or with pita bread.
