Ingredients
  

  • 2 cups cooked chicken shredded or diced
  • 1 cup plain Greek yogurt
  • 1 medium cucumber grated and excess moisture squeezed out
  • 2 cloves garlic minced
  • 1 tablespoon fresh dill chopped (or 1 teaspoon dried dill)
  • 1 tablespoon lemon juice
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • 1 cup cherry tomatoes halved
  • 1/2 red onion finely chopped
  • 4 cups mixed greens optional, for serving

Method
 

  1. In a large mixing bowl, combine the Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, olive oil, salt, and pepper. Mix well until all ingredients are fully incorporated.
  2. Add the shredded or diced chicken to the yogurt mixture and stir until the chicken is evenly coated.
  3. Gently fold in the cherry tomatoes and red onion until well distributed throughout the salad.
  4. Taste and adjust seasoning with additional salt and pepper if needed.
  5. If desired, serve the chicken salad over a bed of mixed greens or in a wrap.
