Ingredients

  • 2 tomahawk ribeye steaks about 2 inches thick, approximately 3-4 pounds total
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper to taste
  • 4 tablespoons unsalted butter softened
  • 3 cloves garlic minced
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • 1 teaspoon lemon juice

Method

  1. Preheat your grill or oven to high heat (about 450°F). If using a grill, make sure to clean and oil the grates.
  2. Pat the tomahawk steaks dry with paper towels. Rub both sides with olive oil, then season generously with salt and black pepper.
  3. In a small bowl, combine the softened butter, minced garlic, parsley, rosemary, thyme, and lemon juice. Mix until well combined and set aside.
  4. Place the steaks on the grill or in the oven. Cook for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness. Use a meat thermometer to check the internal temperature (about 130°F for medium-rare).
  5. Once cooked, remove the steaks from the grill or oven and let them rest for 10-15 minutes to allow the juices to redistribute.
  6. After resting, top each steak with a generous dollop of garlic herb butter before serving.

Notes

  • For a smoky flavor, consider adding wood chips to your grill.
  • If you prefer a different herb blend, try using fresh basil or oregano instead of rosemary and thyme.
