  • 3 cups kale chopped and stems removed
  • 2 ripe peaches sliced
  • 1 cup blueberries fresh
  • 1/2 cup feta cheese crumbled
  • 1/4 cup walnuts chopped
  • 1/4 cup red onion thinly sliced
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the chopped kale and a pinch of salt. Massage the kale with your hands for about 2-3 minutes until it becomes tender and slightly wilted.
  2. In a separate small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper to create the dressing.
  3. Add the sliced peaches, blueberries, feta cheese, walnuts, and red onion to the massaged kale.
  4. Drizzle the dressing over the salad and toss gently to combine all ingredients.
  5. Let the salad sit for about 10 minutes to allow the flavors to meld before serving.
