  • 1 cup Rotisserie Chicken Shredded or chopped
  • 1/4 cup Fresh Cilantro Chopped
  • 2 pieces Green Onions Chopped
  • 1 piece Jalapeño Pepper Diced, adjust for spice level
  • 1/4 cup Red Onion Diced
  • 1/2 cup Red Bell Pepper Diced
  • 1 can Canned Sweet Corn Drained
For the Creamy Dressing
  • 1 cup Plain Greek Yogurt 2% or higher
  • 1/4 cup Mayonnaise Can substitute with more Greek yogurt
  • 1 piece Lime Juice and zest
  • 2 cloves Garlic Minced
  • 1 teaspoon Chili Powder
  • 1 teaspoon Paprika
  • 1/2 teaspoon Cumin
  • to taste Salt and Pepper

Method
 

Preparation
  1. Wash and dry the cucumbers, slice them into thin rounds, place on paper towels to absorb excess moisture, and let sit for 10 minutes.
  2. In a medium bowl, combine Greek yogurt, mayonnaise, minced garlic, lime juice and zest, chili powder, paprika, cumin, salt, and pepper; whisk until smooth.
  3. In a large bowl, combine dried cucumber slices, sweet corn, chopped rotisserie chicken, cilantro, green onions, jalapeño, red onion, and red bell pepper; toss gently.
  4. Pour the creamy dressing over the salad mixture and fold together until everything is coated.
  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving.
