Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked jasmine rice
  • 1 cup shredded cabbage
  • 1/2 cup diced cucumber
  • 1/4 cup sliced green onions
  • 1 avocado sliced
  • 1/2 cup mayonnaise for spicy mayo
  • 1 tablespoon sriracha sauce for spicy mayo
  • 1 teaspoon lime juice for spicy mayo

Method
 

  1. In a medium bowl, combine shrimp, olive oil, garlic powder, paprika, salt, and black pepper. Toss until shrimp are well coated.
  2. Heat a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat.
  3. In a separate bowl, mix together the mayonnaise, sriracha sauce, and lime juice to create the spicy mayo. Adjust the sriracha to taste for desired spiciness.
  4. To assemble the bowls, divide the cooked jasmine rice among four bowls. Top each bowl with cooked shrimp, shredded cabbage, diced cucumber, sliced green onions, and avocado. Drizzle with spicy mayo.
  5. Serve immediately and enjoy!
