  • 1 lb Pork Belly cut into bite-sized cubes
  • 1 tsp Ground Ginger or fresh ginger
  • 1 tsp Freshly Ground Black Pepper or white pepper
For the Marinade
  • 3 tbsp Gochujang (Korean Red Pepper Paste)
  • 1 tbsp Gochugaru (Korean Red Pepper Flakes) or another chili flake
  • 2 tbsp Soy Sauce or tamari for gluten-free
  • 2 tbsp Mirin (Sweet Rice Wine) or sugar and water mixture
  • 1 tbsp Honey or agave syrup
  • 1 tbsp Toasted Sesame Oil or another oil
  • 4 cloves Garlic minced
  • 1 medium White Onion sliced
For Cooking
  • 2 tbsp Canola Oil or vegetable oil
  • 2 stalks Scallions trimmed and chopped
  • 1 tsp Kosher Salt adjust to taste
  • 2 tbsp Toasted Sesame Seeds for garnish
For Serving
  • 2 cups Cooked White Rice or brown rice
  • 8 leaves Butter Lettuce for wrapping

Method
 

Cooking Instructions
  1. Begin by cutting your pork belly into bite-sized cubes and placing them in a large bowl. Season the pork with ground ginger and freshly ground black pepper, massaging the spices into the meat until evenly coated.
  2. In a separate bowl, whisk together gochujang, gochugaru, soy sauce, mirin, honey, toasted sesame oil, and minced garlic. Mix until fully combined.
  3. Add the sliced white onions to the seasoned pork belly along with the marinade. Toss everything together and let it marinate at room temperature for 30 minutes.
  4. Heat a large skillet over medium heat, add canola oil, and sauté two-thirds of the chopped scallions for about 2 minutes.
  5. Introduce the marinated pork belly to the skillet, cooking for 20-25 minutes, stirring occasionally.
  6. Once cooked, transfer the pork belly to a serving bowl. Garnish with sesame seeds and remaining scallions. Serve with cooked white rice and butter lettuce leaves.
