  • 1 tablespoon Cooking Spray To prevent sticking
  • 1 cup Steel-Cut Oats Do not substitute with rolled or quick oats
  • 3 cups Water Can replace with more almond milk
  • 2 cups Unsweetened Almond Milk Or any plant-based or dairy milk
  • 1 cup Canned Pumpkin Homemade pumpkin puree is a great alternative
  • 1/4 cup Maple Syrup Natural sweetener; can substitute with agave syrup or brown sugar
  • 1 teaspoon Vanilla Extract Optional but recommended
  • 2 teaspoons Pumpkin Pie Spice Can substitute with cinnamon and nutmeg
  • 1 teaspoon Ground Cinnamon Fresh cinnamon enhances flavor
  • 1/2 teaspoon Salt Can be omitted for a sodium-reduced version
Toppings
  • 1/4 cup Chopped Pecans Can substitute with walnuts or omit
  • 2 tablespoons Additional Maple Syrup For added sweetness
  • 1/4 cup Almond Milk For drizzling

Method
 

Cooking Instructions
  1. Coat the inside of your slow cooker with cooking spray, butter, or coconut oil to prevent sticking.
  2. In a mixing bowl, combine the steel-cut oats, water, and unsweetened almond milk. Add in the canned pumpkin, maple syrup, vanilla extract, pumpkin pie spice, ground cinnamon, and salt. Mix everything well.
  3. Pour the mixture into the slow cooker and set it to cook on low for 6 to 8 hours, ideally 7 hours.
  4. Once the cycle completes, stir the oatmeal to combine. Serve warm topped with chopped pecans, additional maple syrup, and a splash of almond milk.
  5. If you have leftovers, cool and transfer to a sealed container. Store in the refrigerator for up to one week.
