  • 1 tablespoon brown sugar or honey
  • 2 tablespoons rice wine vinegar or apple cider vinegar
  • 2 cloves minced garlic
  • 1 teaspoon minced ginger
  • 1 tablespoon sriracha sauce adjust to taste
Wrap Filling
  • 2 cups cooked chicken breasts shredded rotisserie chicken can be used
  • 2 cups coleslaw mix or shredded cabbage
  • 1 grated carrot optional
  • 1/4 cup chopped cilantro or parsley
  • 1/4 cup roasted, salted peanuts optional for nut-free options
For Assembling
  • 4 medium-sized tortillas or large lettuce leaves for a low-carb option

Method
 

Preparation
  1. In a medium bowl, whisk together peanut butter, soy sauce, brown sugar, rice wine vinegar, garlic, ginger, and sriracha. Adjust consistency with water as desired.
  2. In a large bowl, combine chicken, coleslaw mix, grated carrot, cilantro, and peanuts. Drizzle half of the peanut sauce over the mixture and toss to combine.
  3. Warm tortillas in a clean, damp paper towel in the microwave for 30 seconds.
  4. On each tortilla, place a portion of the filling, fold in sides, and roll tightly. Repeat with remaining tortillas.
  5. Serve immediately, optionally drizzled with remaining peanut sauce.
