Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 3/4 cup warm water
  • 1 tablespoon olive oil
  • 1 cup fresh spinach chopped
  • 1 cup feta cheese crumbled
  • 1/2 cup ricotta cheese
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 tablespoon fresh dill chopped (optional)
  • Extra olive oil for cooking

Method
 

  1. In a large bowl, combine the flour and salt.
  2. Gradually add the warm water and olive oil, mixing until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth.
  4. Cover with a damp cloth and let it rest for 30 minutes.
  5. In a separate bowl, mix the chopped spinach, feta cheese, ricotta cheese, black pepper, garlic powder, and dill (if using) until well combined.
  6. Divide the rested dough into 4 equal pieces.
  7. Roll each piece into a thin circle, about 10 inches in diameter.
  8. Place a quarter of the spinach and cheese mixture on one half of each dough circle.
  9. Fold the other half over to create a half-moon shape, sealing the edges by pressing down with your fingers.
  10. Heat a skillet over medium heat and add a little olive oil.
  11. Cook each gozleme for about 3-4 minutes on each side, or until golden brown and crispy.
  12. Add more oil as needed.
  13. Serve warm, cut into wedges.
