In a large bowl, combine the flour and salt.
Gradually add the warm water and olive oil, mixing until a dough forms.
Knead the dough on a floured surface for about 5 minutes until smooth.
Cover with a damp cloth and let it rest for 30 minutes.
In a separate bowl, mix the chopped spinach, feta cheese, ricotta cheese, black pepper, garlic powder, and dill (if using) until well combined.
Divide the rested dough into 4 equal pieces.
Roll each piece into a thin circle, about 10 inches in diameter.
Place a quarter of the spinach and cheese mixture on one half of each dough circle.
Fold the other half over to create a half-moon shape, sealing the edges by pressing down with your fingers.
Heat a skillet over medium heat and add a little olive oil.
Cook each gozleme for about 3-4 minutes on each side, or until golden brown and crispy.
Add more oil as needed.
Serve warm, cut into wedges.
