Preparation Steps
  1. Preheat your oven to 425°F (220°C) to ensure it’s hot enough for roasting.
  2. In a mixing bowl, rub your boneless chicken with olive oil, rosemary, lemon zest, salt, and pepper. Lightly coat with flour.
  3. Heat the skillet over medium-high heat. Cook the bacon until crispy, about 5-7 minutes. Remove and drain on a paper towel.
  4. Sear the seasoned chicken in the bacon fat for about 5 minutes per side until golden-brown.
  5. Reduce heat to medium, pour in white wine, and scrape the pan to deglaze. Simmer for about 5 minutes.
  6. Stir the bacon back in, arrange peaches over the chicken, and drizzle with honey.
  7. Transfer the skillet to the oven and roast for about 5 minutes.
  8. Switch to broil for 1 minute to char the peaches and melt the mozzarella.
  9. Serve topped with caramelized peaches and a drizzle of pan sauce. Garnish with mozzarella and basil.
