Ingredients
  

For the Teriyaki Sauce
  • 3/4 cup water divided
  • 1/4 cup soy sauce substitute with coconut aminos for soy-free
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 2 tablespoons honey adjust sweetness to taste
  • 2 tablespoons brown sugar can be replaced with honey or maple syrup
  • 1 tablespoon corn starch mix with cold water to thicken
  • 1 tablespoon orange zest optional
For the Stir Fry
  • 1 pound ground turkey substitute with chicken, pork, or beef
  • 1 tablespoon sesame oil can use olive oil
  • 2 cups broccoli florets can swap with other veggies
  • 1 small onion diced
  • 1 cup shredded carrots or other vegetables
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. In a medium saucepan, combine water, soy sauce, minced garlic, grated ginger, honey, and brown sugar. Heat over medium heat, stirring occasionally, and bring to a low boil for about 5 minutes.
  2. To thicken the sauce, mix corn starch with cold water until fully dissolved. Gradually pour into the sauce while stirring. Return to heat, stirring until thickened for about 2-3 minutes.
  3. In a large wok, heat sesame oil over medium-high heat. Add diced onion and sauté for 2-3 minutes.
  4. Add ground turkey, breaking it apart. Cook for 5-7 minutes until no longer pink.
  5. Stir in broccoli florets and shredded carrots, cooking for 4-5 minutes until tender.
  6. Reduce heat to low and pour in the teriyaki sauce. Stir to coat and simmer for 2-3 minutes.
  7. Serve over rice or quinoa and garnish with sesame seeds or green onions.
