Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or grease a muffin tin.
  2. In a large mixing bowl, combine the ground chicken, minced garlic, grated onion, Parmesan cheese, breadcrumbs, egg, parsley, salt, pepper, and Italian seasoning. Mix gently until just combined.
  3. Shape the mixture into mini meatloaves or press into muffin cups. Place on the baking sheet or muffin tin.
  4. Bake for 22-25 minutes until golden brown and an internal thermometer reads 165°F (74°C). Let rest for a few minutes.
  5. In a saucepan, melt butter over medium heat, add minced garlic and sauté until fragrant. Whisk in flour to create a roux.
  6. Gradually add milk, continue stirring until thickened (about 3-5 minutes). Stir in Parmesan cheese until melted and smooth.
  7. Drizzle the garlic Parmesan cream sauce over the meatloaves, garnish with parsley, and serve with sides.
