- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Slice each croissant in half horizontally, placing them cut side up on the baking sheet.
- Combine mayonnaise and stoneground mustard in a bowl; add chopped chives if using, and spread on croissant halves.
- Layer slices of deli ham and generous slices of Muenster cheese on each croissant half.
- Close croissant halves and arrange them on the baking sheet with space between for even baking.
- Bake in the preheated oven for 10-15 minutes until the cheese is melted and the croissants are golden.
- Remove from oven, let cool slightly, and serve warm garnished with fresh chives if desired.
