Step-by-Step Instructions
  1. Marinate the Chicken: Combine the organic chicken pieces with brown sugar, Jamaican green seasoning, and 2 tablespoons of Jamaican curry powder. Seal and refrigerate for at least 3 hours.
  2. Brown the Chicken: Heat olive oil, add brown sugar, and sear the chicken for 3-4 minutes on each side until golden brown. Remove and set aside.
  3. Burn the Curry Powder: In the same skillet, add more olive oil and the additional curry powder. Stir for 2-3 minutes until dark brown and fragrant.
  4. Prepare the Sauce: Add garlic, ginger, and Scotch bonnet peppers, stirring for about 1 minute. Introduce potatoes, carrots, and bell pepper, sauté for an additional 3-4 minutes.
  5. Build the Curry Sauce: Pour in coconut milk and chicken stock, return chicken, and thyme. Simmer on medium, then reduce heat and cook for 20-25 minutes.
  6. Serve and Garnish: Adjust seasoning, serve over rice or with vegetables, and sprinkle with green onions.
