- In a large mixing bowl, grate one onion directly over 1 cup of panko breadcrumbs. Combine thoroughly and let soak for about 5 minutes.
- Add 1 pound of ground beef, 2 minced garlic cloves, 1 beaten egg, 2 tablespoons of ketchup, 1 tablespoon of Worcestershire sauce, and 1 tablespoon of Dijon mustard to the bowl. Mix all the ingredients by hand.
- Using an ice cream scoop, portion out the meat mixture into 20 to 22 servings and roll into meatballs.
- Heat 2 tablespoons of olive oil in a large skillet over high heat. Brown the meatballs for about 2-3 minutes on each side.
- In the same skillet, melt 2 tablespoons of butter and sauté 8 ounces of sliced white mushrooms for about 4-5 minutes.
- Pour in 2 cups of beef stock and create a slurry with 2 tablespoons of flour mixed with water. Add to the skillet and stir until gravy thickens.
- Return the browned meatballs to the skillet and reduce heat to low for about 5 minutes.
- Serve the Salisbury Steak Meatballs generously covered with gravy over mashed potatoes, rice, or pasta.
