Ingredients
  

  • 1 ¾ cups powdered sugar
  • 1 cup almond flour
  • 3 large egg whites room temperature
  • ¼ cup granulated sugar
  • ½ teaspoon vanilla extract
  • ½ teaspoon cream of tartar
  • Red gel food coloring
  • Blue gel food coloring
  • 1 cup unsalted butter softened
  • 3 cups powdered sugar for filling
  • 1 teaspoon vanilla extract for filling
  • 1 tablespoon milk for filling

Method
 

  1. In a bowl, sift together the powdered sugar and almond flour. Set aside.
  2. In a separate bowl, beat the egg whites until frothy. Gradually add the granulated sugar and cream of tartar, continuing to beat until stiff peaks form. Mix in the vanilla extract.
  3. Divide the meringue into three bowls. Leave one bowl plain, tint one with red gel food coloring, and the other with blue gel food coloring.
  4. Gently fold the almond flour mixture into each colored meringue until just combined.
  5. Preheat the oven to 300°F. Line baking sheets with parchment paper.
  6. Transfer each colored batter into separate piping bags. Pipe small circles onto the prepared baking sheets, leaving space between each.
  7. Tap the baking sheets on the counter to release air bubbles. Let the macarons sit at room temperature for 30-60 minutes until a skin forms.
  8. Bake the macarons for 15-18 minutes, rotating the sheets halfway through. Allow to cool completely on the baking sheets before removing.
  9. For the filling, beat the softened butter until creamy. Gradually add the powdered sugar, vanilla extract, and milk, mixing until smooth.
  10. Pair the macaron shells and pipe a dollop of filling onto the flat side of one shell, then sandwich with another shell.
