Step-by-Step Instructions
  1. Wash and dry the cucumbers. Slice in half lengthwise and smash gently until they crack open. Chop into 1-inch pieces and place in a large mixing bowl.
  2. Add cubed avocado, crumbled feta, chopped pistachios, dill, and chives to the bowl. Gently fold the ingredients together.
  3. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, and minced garlic. Season with salt and pepper. Whisk until emulsified.
