Line a baking sheet with parchment paper and set aside.
In a microwave-safe bowl, melt the white chocolate chips in 30-second intervals, stirring in between, until smooth. If desired, add coconut oil to thin the chocolate for easier dipping.
Dip half of each strawberry into the melted white chocolate, allowing excess to drip off. Place the dipped strawberries on the prepared baking sheet.
In another microwave-safe bowl, melt the blue candy melts in the same manner as the white chocolate.
Dip the other half of each strawberry into the melted blue candy melts and return to the baking sheet.
While the chocolate is still wet, sprinkle red and blue sprinkles on the strawberries for a festive touch.
Refrigerate the strawberries for about 30 minutes or until the chocolate is set.
