In a large bowl, toss the broccoli florets and baby carrots with olive oil, lemon juice, salt, and pepper. Spread the vegetables on the other side of the baking sheet, ensuring they are in a single layer.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the vegetables are tender.
Remove from the oven and let the chicken rest for a few minutes. Garnish with fresh parsley before serving.
