  2. In a large bowl, beat together the eggs, vegetable oil, vanilla extract, and granulated sugar until smooth.
  3. Gently fold in the shredded zucchini.
  4. In a separate bowl, whisk together the flour, salt, baking powder, and baking soda. Gradually mix into the wet ingredients.
  5. Fold in the blueberries that have been tossed in flour.
  6. Pour the batter evenly into the prepared loaf pans and bake for approximately 50 minutes.
  7. Let the bread cool in the pans for about 20 minutes, then remove and place on a wire rack to cool completely.
  8. Whisk together powdered sugar, lemon juice, and heavy whipping cream to make the glaze.
  9. Drizzle the glaze over the cooled bread.
