  • 8-10 cups Romaine Lettuce Chopped, fresh
  • 1 cup Cherry Tomatoes Halved
  • 1 cup Persian Cucumber Sliced, no peeling required
  • ½ cup Red Onion Thinly sliced
  • ¾ cup Kalamata Olives Pitted and halved
  • ½ cup Pepperoncini Sliced or whole
  • 1 cup Croutons Garlic-herb varieties recommended
  • 1 cup Feta Cheese Block sheep’s milk feta
For the Dressing
  • 1 cup Greek Yogurt Plain of any fat content
  • ¼ cup Mayonnaise Creaminess enhancer
  • cup Olive Oil High-quality extra virgin
  • 2 tablespoons Red Wine Vinegar Do not substitute with white vinegar
  • 1 tablespoon Lemon Juice Fresh juice preferred
  • ½ cup Parmesan Cheese Freshly grated
  • 1 teaspoon Dried Herbs Mix of parsley, dill, oregano, basil
  • ½ teaspoon Seasonings Garlic powder, onion powder, paprika, salt, and pepper

Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together Greek yogurt, mayonnaise, olive oil, red wine vinegar, and lemon juice. Add Parmesan cheese, dried herbs, and seasonings. Chill for at least 30 minutes.
  2. Wash and chop romaine lettuce, halve cherry tomatoes, and slice Persian cucumber and red onion. Combine all chopped vegetables in a large bowl.
  3. Halve Kalamata olives and add to the vegetables along with sliced pepperoncini and croutons for added crunch.
  4. Crumble feta cheese over the salad and gently toss to mix the ingredients.
  5. Drizzle the chilled dressing over the salad or serve on the side. Toss gently to coat everything in the dressing.

Notes
