  • 3 cloves Garlic Fresh minced garlic is ideal for optimal flavor.
  • 1 tablespoon Oregano Use dried for convenience or fresh for a vibrant touch.

For the Tzatziki
  • 1 cup Greek Yogurt Full-fat offers the best texture.
  • 1 medium Cucumber Ensure it’s well-drained to avoid watery tzatziki.
  • 1/2 tablespoon Dill Fresh is best, but dried will do in a pinch.
  • 1 clove Garlic Minced.
  • 1/2 tablespoon Lemon Juice Freshly squeezed.
  • Salt To taste.
For the Tacos
  • 4 pieces Tortillas Use flour or corn.
  • 1 cup Cherry Tomatoes Halved.
  • 1 small Red Onion Thinly sliced; substitute with green onions if desired.
  • 1/2 cup Feta Cheese Crumble for texture.
  • 2 handfuls Spinach or Arugula Use any greens you have on hand.

Method
 

Step-by-Step Instructions
  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, and salt and pepper. Add chicken breasts and let marinate in the fridge.
  2. While the chicken marinates, grate cucumber and squeeze out excess moisture. Mix with Greek yogurt, minced garlic, lemon juice, dill, and salt. Refrigerate.
  3. Heat a skillet over medium-high heat and cook marinated chicken breasts for 6-8 minutes per side until golden brown. Remove from heat and let rest before slicing.
  4. As the chicken cooks, prepare toppings: halve cherry tomatoes, slice red onion, crumble feta cheese, and prepare spinach or arugula.
  5. Warm tortillas in a dry skillet or microwave until soft and pliable.
  6. Spread tzatziki on a tortilla, layer with sliced chicken, cherry tomatoes, red onion, feta, and greens. Drizzle more tzatziki if desired.
