  • 4 boneless skinless chicken breasts (about 1.5 pounds)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 cup cherry tomatoes halved
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/4 cup fresh basil chopped

Method
 

  1. In a large skillet, heat the olive oil over medium-high heat. Season the chicken breasts with salt, pepper, garlic powder, onion powder, and Italian seasoning.
  2. Add the chicken to the skillet and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the cherry tomatoes and cook for 2-3 minutes until they start to soften.
  4. Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese until melted and the sauce is smooth.
  5. Return the chicken to the skillet, spooning the sauce over the top. Allow it to simmer for an additional 5 minutes to heat through.
  6. Garnish with fresh basil before serving.
