Ingredients
  

  • 2 heads of romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup toasted pine nuts optional

Method
 

  1. In a large bowl, combine the chopped romaine lettuce and halved cherry tomatoes.
  2. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, garlic powder, salt, and pepper until well combined.
  3. Pour the dressing over the lettuce and tomatoes, tossing gently to coat evenly.
  4. Add the grated Parmesan cheese and toasted pine nuts (if using) to the salad, tossing lightly to combine.
  5. Serve immediately for the freshest taste, or chill in the refrigerator for up to 30 minutes before serving for a cooler option.
