  • 4 cups kale stems removed and chopped

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup toasted pine nuts optional

Method
 

  1. In a large bowl, combine the chopped kale and a pinch of salt. Massage the kale with your hands for about 2-3 minutes until it becomes tender and slightly wilted.
  2. In a small bowl, whisk together the olive oil, lemon juice, lemon zest, Dijon mustard, garlic powder, salt, and pepper until well combined.
  3. Pour the dressing over the massaged kale and toss to coat evenly.
  4. Add the grated Parmesan cheese and toasted pine nuts (if using) to the salad. Toss gently to combine.
  5. Let the salad sit for about 10 minutes to allow the flavors to meld before serving.
