Ingredients
  

For the Marinade
  • 1000 g Chicken preferably dark meat, boneless, skin-on thighs
  • 2 tbsp Ginger fresh, approx. 4-5 slices
  • 1.5 tbsp Garlic freshly minced, approx. 2 cloves
  • 2 tbsp Soy Sauce light soy sauce
  • 1 tbsp Dark Soy Sauce adds depth; substitute with more light soy sauce if needed
  • 8 tbsp Coconut Cream 2 for marinade & 6 for glaze
  • 2 tbsp Sugar brown sugar can be a substitute
  • 1 tbsp Oyster Sauce or substitute with more soy sauce and a pinch of sugar
  • 1.5 tbsp Honey in glaze; maple syrup is a substitute
For the Optional Peanut Sauce
  • 0.5 cup Natural Peanut Butter creamy base for the sauce
  • 2 tbsp Rice Vinegar for tanginess
  • 1 tbsp Thai Red Curry Paste adds spice
  • 1 tbsp Maple Syrup for sweetness
  • 2 tbsp Soy Sauce for flavor enhancement
  • Water to adjust consistency

Method
 

Marinade Preparation
  1. In a large mixing bowl, combine freshly sliced ginger, minced garlic, soy sauce, dark soy sauce, coconut cream, sugar, and oyster sauce. Whisk until smooth.
  2. Cut the chicken into bite-sized pieces and add to the marinade, tossing to coat. Cover and refrigerate for 1-2 hours or preferably overnight.
  3. Soak wooden skewers in water for about 30 minutes.
  4. Thread the marinated chicken onto the skewers tightly.
  5. Preheat grill to medium-high heat, around 500°F (260°C).
  6. Place skewers on the grill and cook for 15-18 minutes, flipping every 2-3 minutes and basting with coconut cream glaze.
  7. Remove from grill and let rest for a few minutes before serving.
