Marinade Preparation
- In a large mixing bowl, combine freshly sliced ginger, minced garlic, soy sauce, dark soy sauce, coconut cream, sugar, and oyster sauce. Whisk until smooth.
- Cut the chicken into bite-sized pieces and add to the marinade, tossing to coat. Cover and refrigerate for 1-2 hours or preferably overnight.
- Soak wooden skewers in water for about 30 minutes.
- Thread the marinated chicken onto the skewers tightly.
- Preheat grill to medium-high heat, around 500°F (260°C).
- Place skewers on the grill and cook for 15-18 minutes, flipping every 2-3 minutes and basting with coconut cream glaze.
- Remove from grill and let rest for a few minutes before serving.
