  1. Peel and slice the apples into 1/2 inch wedges, removing cores and seeds. Mix cinnamon and sugar in a bowl.
  2. Set up three shallow bowls: flour in the first, beaten eggs in the second, and panko breadcrumbs mixed with half the cinnamon-sugar in the third.
  3. Coat each apple slice in flour, then eggs, and lastly in breadcrumb mixture. Repeat until all slices are coated.
  4. Preheat air fryer to 375°F (190°C) for about 3 minutes.
  5. Place coated apple slices in a single layer in the air fryer, lightly spray with cooking spray, and cook for 8-10 minutes, flipping halfway through.
  6. Remove cooked apple fries and sprinkle with remaining cinnamon-sugar mixture. Serve warm with dips like caramel or chocolate.
