Step-by-Step Instructions for Churro Pancakes
  1. In a large mixing bowl, whisk together 1 cup of all-purpose flour, 2 tablespoons of sugar, 1 teaspoon of ground cinnamon, 2 teaspoons of baking powder, and a pinch of salt.
  2. In another bowl, whisk together 1 cup of buttermilk, 1 large egg, 2 tablespoons of vegetable oil, and 1 teaspoon of vanilla extract.
  3. Pour the wet mixture into the dry ingredients, and gently stir together using a spatula until just combined.
  4. Preheat a nonstick skillet or griddle over medium-low heat and lightly grease it. Pour ¼ cup of batter onto the skillet and cook for about 2 minutes until bubbles form. Flip and cook another minute until golden brown.
