For the Chocolate Mousse

Method
 

Prepare the Brownies
  1. Preheat the oven to 350°F (175°C) and line a 9x13-inch baking dish with parchment paper.
  2. In a large mixing bowl, whisk together the flour, cornstarch, cocoa powder, baking powder, and salt.
  3. In a stand mixer, combine the eggs, sugar, melted butter, and vanilla extract and beat until fluffy.
  4. Gradually add the dry ingredients until just combined; avoid overmixing.
  5. Pour the brownie batter into the prepared baking dish and bake for 30-35 minutes.
  6. Allow the brownies to cool in the pan for 10 minutes before transferring them to a wire rack.
Prepare the Chocolate Mousse
  1. In a small saucepan, heat ½ cup of heavy cream over medium heat until steaming.
  2. Remove from heat and stir in the chocolate chips until melted and smooth.
  3. Let the chocolate mixture cool to room temperature.
  4. Whip the remaining cream to stiff peaks and gently fold it into the chocolate mixture.
Assemble and Chill
  1. Pour the mousse over the cooled brownies and smooth the top.
  2. Cover with plastic wrap and refrigerate for at least 2 hours, preferably overnight.
Garnish and Serve
