  • 1 cup Spinach or kale as an alternative
  • 1/2 cup Breadcrumbs gluten-free if needed
  • 1/4 cup Parmesan Cheese or nutritional yeast for vegan
  • 1 large Egg or flax egg for plant-based
  • 2 cloves Garlic minced; fresh is best
  • 1/2 cup Onion diced; substitute with shallots for milder taste
  • 1 tbsp Italian Seasoning customize with fresh herbs
For the Spinach Alfredo Sauce
  • 1 cup Heavy Cream non-dairy cream for lighter option
  • 2 tbsp Butter or olive oil for a healthier alternative

Method
 

Cooking Steps
  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground chicken, ricotta cheese, breadcrumbs, parmesan, beaten egg, minced garlic, diced onion, and Italian seasoning. Mix gently and form into golf ball-sized meatballs.
  3. Arrange meatballs on the prepared baking sheet and bake for 20-25 minutes, until golden brown and internal temperature reaches 165°F (74°C).
  4. In a saucepan over medium heat, melt butter and add heavy cream. Stir until heated, then add spinach and cook until wilted, around 3-4 minutes.
  5. Add baked meatballs to the sauce, gently stirring to coat. Simmer together for 2-3 minutes.
  6. Serve meatballs drizzled with sauce, garnished with extra parmesan cheese and fresh herbs. Enjoy with pasta or garlic bread.
