Cooking Steps
- Preheat your oven to 375°F (190°C) and prepare a baking sheet with parchment paper.
- In a large mixing bowl, combine ground chicken, ricotta cheese, breadcrumbs, parmesan, beaten egg, minced garlic, diced onion, and Italian seasoning. Mix gently and form into golf ball-sized meatballs.
- Arrange meatballs on the prepared baking sheet and bake for 20-25 minutes, until golden brown and internal temperature reaches 165°F (74°C).
- In a saucepan over medium heat, melt butter and add heavy cream. Stir until heated, then add spinach and cook until wilted, around 3-4 minutes.
- Add baked meatballs to the sauce, gently stirring to coat. Simmer together for 2-3 minutes.
- Serve meatballs drizzled with sauce, garnished with extra parmesan cheese and fresh herbs. Enjoy with pasta or garlic bread.
