Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil and 1 tablespoon of unsalted butter over medium heat. Add 4 sliced yellow onions and cook for 10 minutes.
  2. Uncover the skillet, stir the onions, reduce heat to medium-low, and cook for an additional 20-30 minutes until they turn golden brown.
  3. Increase the heat slightly and cook for an additional 5 minutes until onions are deeply colored, then remove from heat.
  4. Preheat your oven to 425°F (218°C) and line a baking sheet with parchment paper.
  5. Roll out the puff pastry into a rectangle, about 1/8 inch thick, and transfer to the baking sheet.
  6. Spread the cooled caramelized onions evenly over the puff pastry, crumble goat cheese on top, and sprinkle fresh thyme leaves.
  7. Bake the tart in the preheated oven at 375°F (190°C) for 25-30 minutes until the crust is golden brown.
  8. Let the tart cool for 10-15 minutes, then garnish with fresh arugula or microgreens before serving.
