Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and place a 9x13 inch baking dish inside to melt ½ cup of salted butter.
  2. Combine 1 cup of all-purpose flour, ¾ cup of brown sugar, 2 teaspoons of baking powder, 1 teaspoon of cinnamon, and a pinch of kosher salt in a mixing bowl. Stir until evenly mixed. Then, pour in 1 cup of milk and 1 teaspoon of vanilla extract, stirring just until combined.
  3. Peel and slice 4-6 ripe peaches. Toss the peach slices with ¼ cup of brown sugar and 2 tablespoons of maple syrup until evenly coated.
  4. Remove the baking dish from the oven, layer half of the seasoned peaches over the melted butter, pour the batter on top without stirring, then layer the remaining peaches over the batter.
  5. Bake in the preheated oven for 50 to 55 minutes until the edges are golden brown and the center is just set.
  6. For optional maple butter, melt ¼ cup of remaining salted butter in a small saucepan over low heat and add ¼ cup of maple syrup. Simmer for 2 minutes, then remove from heat.
  7. Once done, let the cobbler cool for a few minutes. Serve warm topped with vanilla ice cream and a drizzle of maple butter.
