Step-by-Step Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8x8 inch baking pan by lining it with parchment paper.
- In a mixing bowl, combine all-purpose flour, powdered sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Press into the baking pan and bake for 10-12 minutes until lightly golden.
- In a large bowl, beat cream cheese and granulated sugar until smooth. Add egg and vanilla extract; stir in sour cream until fully incorporated.
- Pour the cream cheese mixture over the cooled crust. Sprinkle fresh blueberries on top.
- Mix together flour, oats, brown sugar, cinnamon, and a pinch of salt. Cut in cold butter until crumbly, then sprinkle over the blueberries.
- Bake for 35-40 minutes until edges are golden brown and center is slightly set.
- Cool for at least 2 hours at room temperature, then chill in the refrigerator until firm before cutting into squares.

Notes
Keep butter cold for a flaky crust. Toss blueberries with cornstarch to prevent sogginess. Allow bars to chill for easier slicing.
