Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe skillet, cook the chopped bacon over medium heat for 6-8 minutes until it becomes crispy.
  3. Remove the bacon with a slotted spoon, leaving the fat in the skillet, and set the bacon aside on a paper towel.
  4. Add the diced potatoes to the skillet and sauté over medium heat for 10-12 minutes until golden brown and tender.
  5. In a mixing bowl, whisk together the eggs and heavy cream, adding salt and pepper to taste.
  6. Pour the egg mixture over the potatoes, adding the crispy bacon and cheddar cheese on top. Stir gently.
