Ingredients
  

  • 2 cups fresh broccoli florets
  • 1 large Honeycrisp apple cored and diced
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup red onion finely chopped
  • 1/2 cup walnuts chopped
  • 1/4 cup dried cranberries
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the broccoli florets, diced Honeycrisp apple, shredded cheddar cheese, red onion, walnuts, and dried cranberries. Toss gently to mix the ingredients evenly.
  2. In a separate small bowl, whisk together the Greek yogurt, honey, apple cider vinegar, salt, and pepper until smooth.
  3. Pour the dressing over the salad mixture and toss until all ingredients are well coated.
  4. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve chilled or at room temperature.
