Marinade and Coat Chicken
- In a large bowl, whisk together buttermilk, Sriracha, salt, pepper, and garlic powder until smooth. Add chicken and marinate for at least 4 hours or overnight.
- In a separate bowl, combine flour, cornstarch, paprika, cayenne pepper, and a pinch of salt. Whisk and add 2 tbsp of the marinade.
- Remove chicken from marinade, coat in flour mixture, and set aside.
Fry Chicken
- Heat oil in a skillet or pot to 325˚F (165˚C). Fry chicken for 3-4 minutes on each side until golden brown.
- Check internal temperature reaches 165˚F (75˚C) before removing from oil.
Assemble Sandwich
- Spread spicy mayo on toasted buns, add fried chicken, and top with lettuce, tomato, and pickles.

For best results, marinate the chicken overnight and press flour mixture firmly onto the chicken.
