Ingredients
  

For the Chicken
  • 1 lb Boneless Skinless Chicken Thighs Substitute chicken breasts for a leaner option.
  • 1 cup Buttermilk Or make your own with 1 cup of milk and 1 tbsp lemon juice or vinegar.
  • 2 tbsp Sriracha (or hot sauce) Use a milder sauce if preferred.
For the Coating
  • 1 cup All-Purpose Flour Gluten-free flour can be used.
  • 1/4 cup Cornstarch Mix well with the flour.
  • 1 tbsp Paprika Adjust according to taste.
  • 1/2 tsp Cayenne Pepper Reduce for a milder flavor.
For the Spicy Mayo
  • 1/2 cup Mayonnaise Greek yogurt can be substituted.
  • 1 tsp Garlic Powder Adjust according to personal taste.
For Assembly
  • 4 pieces Burger Buns Preferably toasted.
  • 1 cup Lettuce Fresh toppings.
  • 1 cup Tomato Sliced.
  • 1/2 cup Pickles Or your favorite toppings.

Method
 

Marinade and Coat Chicken
  1. In a large bowl, whisk together buttermilk, Sriracha, salt, pepper, and garlic powder until smooth. Add chicken and marinate for at least 4 hours or overnight.
  2. In a separate bowl, combine flour, cornstarch, paprika, cayenne pepper, and a pinch of salt. Whisk and add 2 tbsp of the marinade.
  3. Remove chicken from marinade, coat in flour mixture, and set aside.
Fry Chicken
  1. Heat oil in a skillet or pot to 325˚F (165˚C). Fry chicken for 3-4 minutes on each side until golden brown.
  2. Check internal temperature reaches 165˚F (75˚C) before removing from oil.
Assemble Sandwich
  1. Spread spicy mayo on toasted buns, add fried chicken, and top with lettuce, tomato, and pickles.

Notes

For best results, marinate the chicken overnight and press flour mixture firmly onto the chicken.
