  • 2 large eggs
  • 1/4 cup black beans drained and rinsed
  • 1/4 cup cooked and crumbled turkey sausage
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup diced bell pepper
  • 1/4 cup diced onion
  • 1 tablespoon olive oil
  • 2 whole wheat tortillas
  • Salt and pepper to taste
  • Fresh cilantro for garnish optional
  • Salsa for serving optional

Method
 

  1. In a medium bowl, whisk together the eggs, salt, and pepper. Set aside.
  2. Heat olive oil in a skillet over medium heat. Add the diced onion and bell pepper, cooking until softened, about 3-4 minutes.
  3. Add the turkey sausage to the skillet and cook for an additional 2 minutes until heated through.
  4. Pour the whisked eggs into the skillet, stirring gently to combine with the vegetables and sausage. Cook until the eggs are just set, about 3-4 minutes.
  5. Remove the skillet from heat and stir in the black beans and cheddar cheese until the cheese is melted.
  6. Warm the tortillas in a separate skillet or microwave for about 15 seconds until pliable.
  7. Spoon the egg mixture evenly onto each tortilla, then roll them up tightly.
  8. Serve warm, garnished with fresh cilantro and salsa if desired.
