Step-by-Step Instructions
  1. In a large mixing bowl, combine the ground meat, breadcrumbs, Parmesan, garlic, egg, and fresh herbs. Season with salt and pepper, then blend and shape into 1-inch meatballs.
  2. Heat a large pot over medium heat, add olive oil, and sauté onions, celery, and carrots for 5-7 minutes until softened.
  3. Pour in chicken broth and season with salt, pepper, and nutmeg. Bring to a gentle simmer for 5-10 minutes.
  4. Drop in the meatballs and cover. Cook for 8-10 minutes, turning halfway until firm and golden-brown.
  5. Stir in pasta and cook for 8-10 minutes at a gentle simmer until al dente, stirring occasionally.
  6. Add fresh greens and stir gently for 2-3 minutes until wilted. Adjust seasoning as needed.
  7. Ladle soup into bowls, garnish with Parmesan and parsley, and serve with crusty bread.
