Ingredients

  • 1 pound large shrimp peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 2 cups romaine lettuce chopped
  • 1 cup Caesar dressing
  • ½ cup grated Parmesan cheese
  • 1 cup cherry tomatoes halved
  • Lemon wedges for serving

Method

  1. Preheat the grill to medium-high heat. In a bowl, toss the shrimp with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
  2. Thread the shrimp onto skewers for easy grilling. Grill the shrimp for 2-3 minutes on each side, or until they are opaque and cooked through. Remove from the grill and set aside.
  3. In a large bowl, combine the chopped romaine lettuce, Caesar dressing, and grated Parmesan cheese. Toss until the lettuce is well coated.
  4. Lay a tortilla flat on a clean surface. Place a generous portion of the Caesar salad mixture in the center, followed by grilled shrimp and a few cherry tomato halves.
  5. Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top. Repeat with the remaining tortillas and filling.
  6. Slice each wrap in half and serve with lemon wedges on the side.
