Preheat your grill to medium-high heat.
In a small bowl, mix together the brown sugar and ground cinnamon.
Sprinkle the cinnamon-sugar mixture evenly over both sides of the pineapple rings.
Place the pineapple rings on the grill and cook for about 3-4 minutes on each side, or until grill marks appear and the pineapple is caramelized.
Drizzle honey over the grilled pineapple just before removing it from the grill.
Remove the pineapple from the grill and let it cool slightly.
Serve warm, topped with coconut flakes and a scoop of vanilla ice cream if desired. Garnish with fresh mint leaves.
